When a beer is packaged without going through the filtration process, a small amount of yeast will remain in the barrel allowing additional fermentation to occur while the beer is stored or shipped. The additional, or secondary fermentation, adds complexity, stability and depth to the flavor of the beer. When this beer is served it is said to be at its "most natural state".
